Hearty Corn Chowder
Ingredients:
¼ cup olive oil
1 cup celery chopped
1 onion chopped
¼ cup flour
3 cups cashew milk
2 teaspoon sea salt
1 can corn (drained) or 1 cup frozen corn
2 Tablespoons coconut sugar
2 cups cooked and diced potatoes
1 teaspoon coarse black pepper
1 teaspoon cayenne pepper
1 Tablespoon dried parsley flakes
Directions:
Saute onion and celery until tender. Add the flour and stir. Add milk, simmering until thickened. Add potatoes, corn and sugar. Keep stirring. Add seasoning. Cook until vegetables are tender.
